Filling Up on Some Football
Labor Day 2015 is in the books and Fall is upon us! Fall is the best time of year for some of us because it means football season is here! At our house, we LOVE all things football, especially the yummy food that we enjoy while cheering our team to victory! In preparation, I’m sharing some of our favorite football (or any sport really!) watching recipes.
BUFFALO CHICKEN DIP
Ingredients –
1 ½ cups chicken (cooked & shredded, store bought rotisserie is best)
8 ounces cream cheese
½ cup Franks Red Hot (or any comparable buffalo style hot sauce)
½ cup ranch dressing
¾ cup shredded cheddar cheese
½ cup bleu cheese crumbles
Directions –
Combine all ingredients in crock-pot and heat on low for 4 hours or high for 2 hours. Serve with tortilla chips.
SWEET & SOUR MEATBALLS
Ingredients –
¼ bag frozen meatballs
½ cup brown sugar
½ cup vinegar
1 teaspoon dried mustard
¼ cup barbeque sauce
1 teaspoon worcestershire sauce
Directions –
Cook meatballs according to directions on package. Place cooked meatballs on bottom of pot and layer with all other ingredients. Heat on low until warmed stirring occasionally.
MUDDY BUDDIES
Ingredients –
9 cups Chex (or rice squares) cereal
1 cup milk chocolate chips
½ cup peanut butter
¼ cup butter
1 teaspoon vanilla
1 ½ cup powdered sugar
Directions –
Place cereal in large bowl.
Microwave chocolate chips, peanut butter, and butter for 1 minute then stir Microwave another 30 seconds, stir, repeat until smooth
Stir in vanilla
Pour over cereal and toss gently with large spatula or spoon
Sprinkle powdered sugar over coated cereal and toss again until well covered
SPARKLING WATERMELON LEMONADE SPRITZERS
Ingredients –
1 (6-pound) seedless watermelon, cut into 1-inch chunks (8 cups)
1 can (12 ounces) frozen lemonade concentrate
1 can (12 ounces) pink lemonade concentrate
Chilled seltzer or club soda
Lime slices, for garnish
Directions –
Puree watermelon in blender until smooth, pour into 2 quart pitcher
Stir in lemonade concentrates until completely melted
Cover and refrigerate overnight
When ready to serve, fill 10 ounce glasses with ice and 1/ cup of watermelon mixture; top with seltzer or club soda and garnish with lime slices
